Lentil Lasagna


This lasagna is great if you are wanting something to taste somewhat like mince. 

Ingredients (makes 3 serves) :
Gluten free pasta sheets 
Onion
Olive oil
Garlic
1/2 cup of water
2 x tins of lentils
1 x tin of diced tomatos
1 x fresh tomato 
1 x spoonfull of gluten free/vegetarian gravy mix 

3/4 cup of milk
1 x tablespoon of butter/margarine
1 x teaspoon gluten free plain flour
hand full of cheese. 

Directions:

1) In a pan, cook the onion finely chopped) and garlic.  
2) Add the tins of lentils and diced tomato
3) Add fresh tomato, sliced into 4. 
4) Add in the 1/2 cup of water and gravy mix. Stir and simmer for 5 minutes.
5) Layer lasagna sheets and lentil mix in a baking dish. I added extra cheese on each layer of lasagna 
6) Cook 200 degrees for 20 minutes. 
7) In a sauce pan melt butter in the 3/4 cup of milk, add in the gluten free flour and stir until mixed
8) Add in handful cheese, continue stirring until it thickens. 
9) Pour sauce over lasagna, and cook for another 30 minutes in oven.
10) Eat! Nom nom nom.

Gluten Free Melbourne - Mojos Weird Pizza


Sometimes there is nothing better than ordering in food. And when you can actually order gluten free, that is even better.

I have ordered from Mojo's Weird Pizza (clifton hill) a few times now, and I can say they are my new delivery favourite. The gluten free bases are crispy, and don't crumble/melt in your mouth as others often do. My suggestion is the Gringo + a salad. Yum!

Potato and Leek Soup



Potato and Leek Soup
(serves 3)

Ingredients:
3 x potatos
1 x leek
1 x onion
1 x vegetarian stock cube
1 x tbls greek yogurt (optional)
garlic
water

Directions:
1) Chop potatos, leek and onion
2) In a pan, cook the leek and onion with garlic and a dash of olive oil
3) Add water, potato and stock cube and bring to the boil
4) Simmer for 10 minutes
5) Blend together, and add greek yogurt if desired
6) Serve and eat!

Quinoa Mushroom Risotto




This is the first quinoa dish I ever made, and it is my absolute favourite. I eat it most days. This quantities make one portion. Enjoy!


Ingredients:

50g quinoa
100g mushrooms
25g feta cheese
1/4 onion
Basil leaves
Stock cube
Garlic

Directions:

1) Cook quinoa in rice cooker
2) In a pan cook the chopped onion, mushroom and garlic until lightly brown
2) Add cooked quinoa, 1/2 cup of water, stock cube and stir
3) Add basil leaves and crumble feta into the mix
4) Stir all together for a minute and serve
